The 1998 Dom Ruinart La Réserve is the same wine as the original release, but aged on cork and longer time on the lees. It offers up a haunting mix of lemon confit, hazelnut spice, butter and baked apple tart. There is more freshness than in the original release, but the toasty style that favored the maison during this time creates a sort of convergence. The 1998s are basically two sides of the same coin; stylistically different, but qualitatively pretty similar. The dosage of 4 grams per liter is lower than in the original release, as the longer time on the lees adds texture, and therefore less sugar is needed to round out the balance. Disgorged: July, 2016.

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
